From street food to fine dining, there’s good food aplenty in the Philippines — and the rest of the world is finally sitting up and taking notice. Case in point: Gallery Vask in Manila has just clinched a coveted spot on the prestigious Asia’s 50 Best Restaurants list for 2016, coming in at 39 — the only Filipino restaurant on the list. The fine-dining resto also walked away with the title of “Best Restaurant in the Philippines”.
Situated in a high-concept art gallery, Gallery Vask serves up modern Spanish cuisine with a Filipino twist. And the food seems to draw creative inspiration from its artistic surrounds, with myriad flavors and textures that make for a multi-sensory dining experience. For instance, Chef J. Luis Gonzalez dishes up signature plates such as adlai rice paired with bagoong fermented-fish paste and served with sea urchin and pigeon, as well as tiradito of raw tuna loin, kinilaw gel with coconut milk, calamansi and tabon-tabon fruit.
Dying to snag a table already? Do note that reservations will be exceedingly hard to come by — the intimate restaurant only seats 20, and we’re sure that the rest of the world will be clamoring for a taste, too. But hey, all good things are worth the wait!
